Black Bean Salsa!!!

Last night we had a delicious supper!  I love this time of year because the fresh veggies are coming in and they are so good.  We had taco salad with fresh tomatos and my favorite Black Bean Salsa!!!!! I could eat the whole bowl all by myself.  This recipe is incredibly EASY! It is the Black Bean Salsa Mix from Homemade Gourmet. A dear friend of mine who sells HG got me hooked on this product and another HG product called Maria's Salsa. They both are dry mixes that you add ingredients to. Super easy and super delicious. 

1    Homemade Gourmet® Black Bean Salsa Mix  
1  2.25-ounce  sliced black olives*, undrained  
1/4  cup  water  
1  large  ripe avocado, peeled and diced  
2  10-ounce  cans diced tomatoes with chilies, undrained  

1. In large bowl, combine all ingredients. (Beans must be covered in liquid to rehydrate.)

2. Cover bowl and chill at least 2 hours before serving. (You can refrigerate this salsa for up to 5 days.)

3. Serve as a dip with tortilla chips.

*Note: If you omit olives, add 1/3 to 1/2 cup water.
